Charles and I have been having the best time taking online cooking classes over the last several months. Our most recent class was an Airbnb Experience with Chef Kenji learning to make Japanese soufflé pancakes at home! Kenji was kind, patient, funny and SO engaging. He specializes in Japanese cooking and is obviously passionate about it. I love the Airbnb Experience classes because they limit the number of students to 10 people, so you really get the chance to interact with the instructor and the class members. Pro Pancake Tips:
1. Be sure there is NO TRACE of oil in the bowl you’re making your meringue in or meringue will not whip up.
2. Double up the parchment wrap around each pancake.
3. Don’t let the water in your pan touch the pancake or your cake will deflate.
4. Don’t let the batter sit out too long or it will begin to fall.
5. Add water to batter slowly as not to create batter that is too runny!
