This recipe is SO easy and includes tons of chopping- the perfect project for those school aged kiddos that need to practice their skills! This is one of our go-to favorites and includes tons of stuff we already normally have around the house.
Mediterranean Quinoa Salad Recipe!
Salad Ingredients:

1 cup cooked quinoa, we used red

1 bell pepper chopped, red or orange are my favorite!

1 cucumber chopped

1 cup garbanzo beans

1 cup black beans
-
1/2 a red onion diced
-
1 cup kalamata olives halved
-
1 cup cherry tomatoes halved

1/4 cup crumbled feta cheese
Dressing Ingredients:

1/3 cup olive oil
-
1 tbsp mustard, we like dijon!

1/2 tsp oregano
-
1/2 tsp crushed garlic
-
1/4 tsp cumin
-
2 tbsp lemon juice
-
1 tbsp white wine vinegar
-
salt & pepper to taste
Steps: Cook the quinoa, wash the beans, chop the salad ingredients and mix everything together in a big bowl. Make your salad dressing in a jar and shake well. Pour over the entire salad OR just pour over each individual bowl before eating to store longer! THAT’S IT! Enjoy!
